Preparation

  • Remove the prime rib from the refrigerator and discard all packaging. Keep the butcher twine on the roast to hold the bones during cooking. Place the roast on a roasting rack inside a roasting pan.
  • In a small bowl, combine the seasoned salt, garlic powder, onion powder, and black pepper to create a flavorful dry rub.
  • Generously coat all sides of the prime rib with the dry rub mixture, ensuring every nook and cranny is covered. Place the roast fat side up in the pan.
  • Allow the roast to sit at room temperature for at least 2 hours before cooking.
  • Preheat the oven to 500°F. Roast the prime rib for 5 minutes per pound for a total of 25 minutes.
  • After 25 minutes, turn off the oven and do not open the oven door. Leave the roast inside for an additional 2 hours.
  • Check the internal temperature; it should read between 125-130°F for medium-rare.
  • Remove the roast from the oven, cover with aluminum foil, and let it rest for 10 minutes before slicing and serving.

Notes

To enhance flavor, choose a quality roast with good marbling. Use a meat thermometer to monitor temperature. Letting the meat rest is crucial for juicy slices.
