Ingredients
  

Crust

  • 2 cups graham cracker crumbs or shortbread crumbs for a buttery base
  • 1/2 cup unsalted butter, melted to bind the crumbs together
  • 1/4 cup granulated sugar optional, for extra sweetness

Cheesecake Filling

  • 24 oz cream cheese, softened for a smooth texture
  • 1 cup granulated sugar to balance the richness
  • 3 large eggs for structure
  • 1 tsp vanilla extract to enhance the flavors
  • 1/4 cup sour cream for added creaminess
  • 1/4 cup heavy cream for a rich and luscious feel

Baklava Layer

  • 1 cup chopped pistachios for nutty crunch
  • 1/2 cup chopped walnuts or other nuts optional
  • 1/2 cup granulated sugar used in the baklava layer
  • 1 tsp cinnamon for warmth
  • 1/4 cup honey for a touch of natural sweetness

Phyllo Layer

  • 8-10 sheets phyllo dough for flaky layers
  • 1/2 cup melted butter to brush the phyllo

Syrup

  • 1/2 cup honey combined with water for drizzle
  • 1/2 cup water to create the syrup
  • 1/2 cup sugar for sweetness in the syrup
  • 1 tsp lemon juice for refreshing tang
  • 1 tsp vanilla extract to round out the flavors

Instructions
 

Preparation & Crust

  • Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
  • Press this mixture firmly into the bottom of the springform pan and bake for 8-10 minutes until golden. Allow to cool completely.

Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
  • Add eggs one at a time, beating well after each addition.
  • Incorporate the vanilla extract, sour cream, and heavy cream until combined.
  • Pour the filling over the cooled crust.

Baklava Layer

  • In a separate bowl, mix the chopped pistachios, optional nuts, granulated sugar, cinnamon, and honey.
  • Spread the baklava mixture over the cheesecake mixture.

Phyllo Layer

  • Brush a sheet of phyllo dough with melted butter, layer over the mixture, and repeat with 8-10 layers, buttering each.

Bake & Chill

  • Loosely cover the pan with foil and bake for 1 hour until just set.
  • Let cool completely in the oven with the door slightly ajar and then chill in the refrigerator for at least 4 hours or overnight.

Honey Syrup

  • In a small saucepan, combine honey, water, sugar, lemon juice, and vanilla extract, boil, and then simmer for about 10 minutes.
  • Allow the syrup to cool slightly.

Serve

  • Once chilled, pour the cooled syrup over the cheesecake and garnish with additional chopped pistachios.

Notes

Use quality cream cheese for the best creamy consistency and flavor. Keeping unused phyllo sheets covered with a damp cloth prevents them from drying out.
