Instructions
 

Preparation of the Pistachio Base

  • Combine ground pistachios, graham cracker crumbs, powdered sugar, and melted butter in a bowl.
  • Stir until the mixture resembles wet sand and press it firmly into the bottom of ramekins or mini springform pans.
  • Chill in the refrigerator while preparing the filling.

Preparation of the Cheesecake Filling

  • In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
  • Add the eggs one at a time, beating well after each addition.
  • Mix in sour cream, heavy cream, vanilla extract, and crushed pistachios until combined.
  • Spoon the cheesecake filling over the prepared pistachio base.

Baking the Cheesecakes

  • Preheat the oven to 325°F (163°C).
  • Bake the cheesecakes for 20-25 minutes until set but jiggly in the center.
  • Cool inside the oven with the door slightly ajar for about 30 minutes.
  • After cooling, chill in the refrigerator for at least 4 hours or overnight.

Preparation of the Blackberry Topping

  • Combine blackberries, granulated sugar, and lemon juice in a saucepan.
  • Cook over medium heat for 5-7 minutes until syrupy.
