Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
  • In a bowl, mix together the all-purpose flour, ground pistachios, baking powder, and salt.
  • Beat the egg yolks with half the granulated sugar until fluffy and pale in color.
  • In a separate bowl, beat the egg whites until soft peaks form, gradually adding the remaining sugar until stiff peaks form.
  • Gently fold the fluffy yolk mixture into the egg whites, taking care to preserve the airy texture.
  • Sift in the dry ingredients and fold until just combined.
  • Pour the batter into the prepared dish and bake for 20-25 minutes, or until the top is golden and a toothpick comes out clean.
  • Allow the sponge cake to cool completely in the pan.

Prepare the Cream

  • Whisk together the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract in a large bowl until smooth and thick.

Assembly

  • Mix the cooled espresso with the coffee liqueur in a shallow dish.
  • Cut the cooled sponge cake into layers. Brush each layer generously with the espresso mixture.
  • Spread a layer of the mascarpone cream between each layer of sponge.
  • Cover the top with a layer of cream, dust with cocoa powder, and sprinkle the chopped pistachios.
  • Refrigerate for at least 4 hours, or preferably overnight.

Notes

For an extra touch of flavor, you can toast the chopped pistachios lightly before sprinkling them on top. If you prefer a less intense coffee flavor, reduce the amount of espresso or coffee liqueur used. Always allow the tiramisu to chill completely before serving for the best texture and flavor!
