  • 1/2 cup chia seeds Provides crunch and rich in omega-3 fatty acids.
  • 2 cups almond milk Use preferred milk type.
  • 1/2 teaspoon vanilla extract Adds aromatic warmth.
  • 1-2 tablespoons honey or maple syrup Adjust sweetness to taste.

For the Assembly

  • 1 cup pomegranate seeds Provides flavor and color.
  • 1/2 cup granola For crunch.
  • 1/2 cup Greek yogurt Optional for creaminess.
  • to taste fresh mint leaves For garnish.

Chia Pudding Preparation

  • In a medium bowl, combine chia seeds, almond milk, vanilla extract, and sweetener. Stir well to distribute chia seeds.
  • Let the mixture sit for 5 minutes to allow chia seeds to absorb liquid. Stir again to prevent clumping.
  • Cover and refrigerate for at least 2 hours, or ideally overnight, to thicken.

Parfait Assembly

  • Once chia pudding has thickened, take a glass or jar for layering.
  • Layer chia pudding, followed by Greek yogurt (if using), pomegranate seeds, and granola. Repeat layers until the glass is full.
  • Top with fresh pomegranate seeds, granola, and a sprig of mint.

Notes

For a creamier texture, increase Greek yogurt. Substitute granola with crushed nuts or seeds. Spice it up with cinnamon or nutmeg if desired.
