Macaron Shells

  • 1.25 cups almond flour Provides a tender, melt-in-your-mouth texture.
  • 1.75 cups powdered sugar Adds sweetness and helps create a crispy shell.
  • 3 large egg whites, at room temperature Creates airy macarons when whipped.
  • 0.25 cups granulated sugar Stabilizes egg whites during whipping.
  • 0.5 teaspoons vanilla extract Enhances the flavor.
  • 1 drops pink gel food coloring For a charming pink hue.

Filling

  • 0.5 cups raspberry jam Provides tartness to contrast with the sweet meringue.
  • 0.25 cups pistachios, finely chopped Adds a crunchy texture.

Instructions
 

Prepare the Macaron Shells

  • Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  • Pulse the almond flour and powdered sugar together in a food processor until finely ground.
  • Sift the mixture into a clean bowl, discarding any larger bits.
  • Beat the egg whites on medium speed until foamy, then gradually add the granulated sugar while increasing the speed to high.
  • Whip until stiff peaks form and add vanilla extract and pink gel food coloring, mixing until uniform.
  • Fold the almond flour mixture into the egg whites in two parts using a spatula until smooth.
  • Transfer the batter to a piping bag fitted with a round tip.
  • Pipe small circles onto prepared baking sheets, spacing them 1 inch apart.
  • Tap the baking sheets on the counter to release air bubbles and let them rest until a skin forms, 30-60 minutes.

Bake the Macaron Shells

  • Bake the macarons in the preheated oven for 15-18 minutes, until they have shiny tops and raised feet.
  • Allow them to cool completely on the baking sheets before removing.

Make the Raspberry Pistachio Filling

  • Heat the raspberry jam in a small saucepan over medium heat until soft and smooth, then let cool.
  • Pair cooled macaron shells by size and pipe a small dollop of raspberry jam into one shell of each pair.
  • Sprinkle chopped pistachios around the edge and sandwich with the other shell.

Serve and Enjoy

  • Let assembled macarons rest in the fridge for at least 24 hours for best flavor.
  • Remove them from the fridge 15 minutes before serving to bring to room temperature.

Notes

For best results, age egg whites for a day uncovered in the fridge. Always sift the flour and sugar, and consider flavor variations with different jams.
