Instructions
 

Preparation of Macaron Shells

  • Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  • In a food processor, pulse the almond flour and powdered sugar together until finely ground. Sift this mixture through a fine mesh sieve into a clean bowl.
  • In a stand mixer, beat the egg whites on medium speed until foamy. Gradually sprinkle in the granulated sugar while increasing the speed to high, whipping until stiff peaks form.
  • Incorporate the vanilla extract and a few drops of pink gel food coloring, blending until the color is uniform.
  • Gently fold the sifted almond flour and powdered sugar mixture into the whipped egg whites in two parts using a spatula.
  • Transfer the batter into a piping bag fitted with a round tip. Pipe small circles, about 1 1/2 inches in diameter, onto the prepared sheets. Tap on the counter to release air bubbles.
  • Allow the piped macarons to sit at room temperature for 30-60 minutes until they form a skin on top.

Baking the Macaron Shells

  • Place your macarons in the preheated oven and bake for 15-18 minutes. They are ready when smooth with shiny tops and slightly raised feet.
  • Let the shells cool completely on the baking sheets before gently removing them.

Making the Raspberry Pistachio Filling

  • In a small saucepan, heat the raspberry jam over medium heat until soft and smooth, about a couple of minutes.
  • Let the heated jam cool for a few minutes before filling the macarons.

Assembly

  • Pair the macaron shells by size. Pipe a small dollop of cooled raspberry jam in the center of one shell of each pair.
  • Sprinkle finely chopped pistachios around the edge of the jam and gently sandwich the other shell on top.

Serving

  • For best flavor, let the assembled macarons rest in the fridge for at least 24 hours. Remove from the fridge 15 minutes before serving.
