Ingredients

Cake Base

  • 1 package 18.25 oz. of premium white cake mix This creamy and tender cake mix sets the perfect foundation for your dessert.
  • 1 package of ingredients specified on the cake mix package Typically water, eggs, and oil.

Flavoring and Toppings

  • 1 package 3 oz. of raspberry-flavored gelatin A burst of aromatic raspberry flavor that adds a delightful twist.
  • 2 cups of hot purified water Essential for dissolving the gelatin, creating a moist and flavorful cake.
  • 1 container 10 oz. of high-quality raspberry preserves These rich, fruity preserves will add an intense raspberry flavor.
  • 1 container 8 oz. of whipped topping, previously thawed Creamy and light, this topping will elevate your cake's texture.
  • 1 packet 7 oz. of unsweetened shredded coconut Adds an aromatic, textured garnish that complements the fruity layers beautifully.

Instructions

Preparation

  • Begin by following the instructions on the white cake mix package. Transfer the batter to a 9×13-inch baking pan and bake according to package directions.
  • Allow the cake to cool at room temperature for approximately 30 minutes.
  • Create perforations in the cake using the end of a wooden spoon or meat fork, penetrating halfway into the cake.

Adding the Raspberry Flavor

  • In a separate vessel, combine the raspberry-flavored gelatin with 2 cups of hot water, ensuring it is fully dissolved.
  • Distribute the dissolved gelatin thoroughly over the cake, ensuring it seeps into all the perforations.
  • Warm the raspberry preserves in a microwave for about 30 seconds until spreadable, then apply them over the gelatin-layered cake.
  • Spread the thawed whipped topping evenly over the raspberry preserves.
  • Sprinkle unsweetened shredded coconut on top as a garnish.

Chilling

  • Refrigerate the cake for a minimum of 4 hours before serving.

Notes

For a richer flavor, consider using fresh raspberries as a garnish. Make sure to poke enough holes in the cake to absorb the gelatin but be careful not to tear the cake apart.
