Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
  • In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  • Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with sour cream. Begin and end with dry ingredients.
  • Gently fold in the diced peaches and strawberries.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake in the preheated oven for 55-65 minutes or until a toothpick inserted comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Glazing

  • In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  • Once the cake is cooled, drizzle the glaze over the top.
