Preparation

  • Begin by tossing the butternut squash cubes in olive oil, salt, and pepper. Spread them on a baking sheet and roast at 400°F for about 20–25 minutes until they achieve a caramelized exterior and fork-tender texture.
  • In a large pot over medium heat, brown the chicken sausage until it becomes crispy and golden. Remove the sausage from the pot and set it aside.
  • In the same pot, add chopped onion and minced garlic, sautéing until soft and fragrant. Add drained diced tomatoes, roasted butternut squash, and chicken broth. Allow this mixture to simmer.
  • Stir in your choice of small pasta and cook until al dente, about 8–10 minutes.
  • Gently stir in the heavy cream, fresh spinach, and the cooked chicken sausage. Allow everything to simmer for an additional 3–4 minutes until the spinach wilts and the soup is heated through.
  • Sprinkle with fresh thyme and grated Parmesan before serving.
