Preparation

  • Cook the spiral pasta in boiling water according to package instructions until al dente (about 8-10 minutes). Drain and rinse under cold water.
  • Chop the red bell pepper, green bell pepper, red onion, and grated carrot into small, uniform pieces.
  • In a large mixing bowl, combine the cooled pasta, sweet corn, bell peppers, red onion, grated carrot, and cilantro. Toss gently to combine.
  • In a separate bowl, whisk together the mayonnaise, heavy cream, lemon juice, and white vinegar. Season the dressing with salt and pepper.
  • Pour the dressing over the salad mixture and toss gently to coat. Cover and refrigerate for at least one hour.
  • Serve the chilled salad and enjoy!

Notes
