Preparation

  • In a large pot, heat the olive oil (or butter) over medium heat.
  • Add the ground beef and cook until browned, breaking it up into small pieces with a spoon.
  • Remove excess fat if necessary.
  • Add chopped onion and minced garlic to the pot and sauté for 2-3 minutes until softened.
  • Stir in the diced carrots, celery, and potatoes. Cook for another 5 minutes.
  • Pour in the beef broth, diced tomatoes (with juice), and frozen peas. Stir in the dried thyme, salt, and pepper.
  • Bring to a boil.
  • Reduce the heat and let simmer for 20-25 minutes, until the vegetables are tender.
  • Taste and adjust seasoning with more salt, pepper, or thyme if needed.
  • Ladle into bowls and serve hot, optionally topping with mashed potatoes or shredded cheese.

Notes

For an elevated experience, consider browning the beef with Worcestershire sauce and customizing vegetables based on availability. For a creamier texture, purée half the soup and stir it back in.
