Ingredients

Main Ingredients

  • 1 pound ground beef perfectly browned
  • 1 small onion, diced releasing aromatic notes
  • 1 each green pepper, diced adding a fresh bite
  • 30 ounces sloppy Joe sauce two 15 oz cans
  • 16 ounces rotini, cooked to al dente
  • 2 cups shredded cheddar cheese, divided for topping

Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • In a large skillet, cook the ground beef, onion, and green pepper over medium heat until the beef is browned and the vegetables are soft. Drain any excess fat.
  • Add the sloppy Joe sauce to the skillet, stir until well combined, and let it simmer for approximately 5 minutes.

Mixing

  • Incorporate the cooked rotini into the beef mixture, stirring to coat each piece with sauce.

Assembling

  • Spread half of the pasta and beef mixture into the prepared baking dish and top with 1 cup of shredded cheddar cheese.
  • Layer the remaining pasta mixture over the cheese, then sprinkle the final cup of cheddar cheese on top.

Baking

  • Bake in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let cool for a few minutes before serving.

Notes

For an extra kick, consider adding a splash of hot sauce. You can also substitute ground turkey or chicken for a leaner option. For a crispy topping, mix breadcrumbs with melted butter before baking.
