Preparation

  • Peel the sweet potatoes and cut them into 1/4-inch thick rounds for even cooking.
  • In a large pot, add sweet potato slices and cover with water. Bring to a boil, then reduce heat and simmer for 5-7 minutes until slightly tender. Drain and set aside to cool.

Cooking

  • In a skillet, melt butter over medium heat. Add brown sugar, water, cinnamon, nutmeg, and salt. Stir constantly until the mixture is dissolved and bubbling, about 3-5 minutes.
  • Add the sweet potatoes to the skillet and stir gently to coat with the syrup. Reduce heat to low and simmer for 10-15 minutes, turning occasionally to ensure even coating.

Notes
