  • 2 pieces chicken breasts, diced into bite-sized pieces Provides a juicy and succulent base.

  • 2 tablespoons vegetable oil For stirring and frying.

  • 1 tablespoon oyster sauce Provides a slightly sweet and savory profile.

  • 1 cup jasmine rice, uncooked Fluffy and aromatic once cooked.

Instructions
 

Cooking the Rice

  • Rinse the jasmine rice under cold water until the water runs clear.
  • In a medium saucepan, add 2 cups of water and bring it to a boil.
  • Once boiling, add the rinsed rice, cover, and reduce the heat to low.
  • Cook for about 12–15 minutes until the rice is fluffy. Once done, set it aside and keep warm.

Prepare the Sauce

  • In a small bowl, mix soy sauce, oyster sauce, and sugar. Stir well until the sugar dissolves completely.
  • Set this sauce mixture aside, as it will be the magic ingredient that brings our dish together.

Cooking the Stir-Fry

  • Heat vegetable oil in a wok or large pan over medium-high heat.
  • When the oil is shimmering, add minced garlic and sliced chilies. Sauté them for about 30 seconds.
  • Add the diced chicken to the pan and stir-fry for 6–7 minutes until it turns golden brown and is cooked through.
  • Toss in the sliced onion and green bell pepper, and cook for an additional 2–3 minutes.
  • Pour in the sauce mixture and stir well to coat all the ingredients evenly. Let it cook for another 1–2 minutes.

Serving

  • Serve the stir-fry over a mound of fluffy jasmine rice, garnished with fresh cucumber slices and diced tomatoes.

Notes

For best results, ensure your pan is hot enough before adding the oil. Don’t overcrowd the pan, and watch the garlic closely to avoid burning. Prep all ingredients before cooking to streamline the process.
