For the Sandwich

  • 2 slices sourdough or artisan bread Offers thick, crispy exteriors and chewy interiors.
  • 1 tablespoon butter For grilling, lending richness and encouraging golden-brown crust.
  • ½ cup shredded mozzarella cheese Known for its creamy melt and stretchy texture.
  • ¼ cup shredded Monterey Jack or pepper jack cheese Adds sharpness and a spicy kick.
  • 1 fresh parsley, chopped For garnish, adding pop of color and freshness.

Instructions
 

Sauté the Spicy Shrimp

  • Heat olive oil in a skillet over medium-high heat.
  • Add the shrimp, followed by minced garlic, chili flakes, salt, and black pepper.
  • Sear the shrimp for 2–3 minutes on each side until they turn pink and juicy.

Build That Cheese Stack

  • Layer mozzarella and pepper jack cheese on one slice of bread.
  • Pile the sautéed shrimp on top of the cheeses.
  • Top with the second slice of bread.

Grill It Golden

  • Melt butter in the same skillet over medium heat.
  • Place the sandwich in the skillet, pressing down gently.
  • Grill until the bread is crispy and golden brown on both sides, about 3–4 minutes per side.

Garnish & Serve Hot

  • Remove the sandwich from the heat and let it sit for a minute.
  • Sprinkle with fresh chopped parsley and serve immediately.

Notes

Consider adding sliced avocado for creaminess or swapping cheeses. Pre-cooked shrimp can save time.
