Ingredients
  

For the Chicken

  • 4 large chicken legs or drumsticks Juicy and succulent
  • 1 tsp smoked paprika For a deep, smoky flavor
  • 1 tsp garlic powder Adding aromatic notes
  • to taste Salt & pepper Enhancing the overall taste
  • 1 tbsp olive oil For crispiness on the outside
  • 1 cup thick BBQ sauce For slathering on the chicken

For the Slaw

  • 2 cups shredded cabbage (green & purple) Crisp and crunchy
  • 1/2 cup shredded carrots (optional) Adding sweetness and color
  • 1/4 cup mayonnaise Creamy and luscious
  • 1 tbsp apple cider vinegar For a tangy kick
  • 1 tsp sugar To balance flavors

For the Sautéed Vegetables

  • 1 zucchini Sliced for a fresh touch
  • 1 large red bell pepper Julienned for sweetness
  • 1 large carrot Thinly sliced, adding vibrant color
  • 1/2 large onion Sliced for depth of flavor
  • 1/2 cup broccoli florets Bright and nutritious
  • 1 tbsp olive oil For sautéing
  • to taste Salt, pepper, and a pinch of Italian seasoning For seasoning

For Serving

  • Pickles For a tangy side crunch (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Pat the chicken legs dry and rub them with olive oil, smoked paprika, garlic powder, salt, and pepper.
  • Position the chicken on a baking rack set over a tray and bake for 35–40 minutes, flipping halfway. Brush with BBQ sauce during the last 10 minutes.

Slaw Preparation

  • In a large bowl, combine shredded cabbage and shredded carrots (if using). In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper. Pour the dressing over the cabbage mixture and toss until coated.

Cooking Vegetables

  • Heat olive oil in a skillet over medium heat. Add sliced onions and cook until translucent. Then add zucchini, bell pepper, carrots, and broccoli florets. Sauté for 6–8 minutes until just tender. Season with salt, pepper, and Italian seasoning.

Plating

  • Arrange the sticky BBQ chicken alongside the creamy slaw and sautéed vegetables. Add pickles for extra crunch if desired.

Notes

For best flavor, marinate the chicken in BBQ sauce for a few hours or overnight. You can also grill the chicken for a charred flavor. Feel free to add different vegetables based on your preference.
