Make the Cheesecake Filling

  • Use a cookie scoop to portion out teaspoon-sized dollops and place them onto a parchment-lined tray.
  • Freeze for about one hour or until the filling is firm enough to handle.

Prepare the Cookie Dough

  • In another medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt, then set aside.
  • In a large bowl, cream together the softened butter, cream cheese, granulated sugar, and brown sugar until light and fluffy, about two minutes.

Assemble the Cookies
