Ingredients
  

For the crust

  • 20 pieces red velvet Oreos or red velvet sandwich cookies Can substitute with regular Oreos
  • 4 tablespoons unsalted butter, melted

For the cheesecake filling

  • 16 oz cream cheese Ensure it's soft for easy mixing
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream Can use regular or low-fat
  • 1 teaspoon vanilla extract
  • Optional red velvet cake batter For enhancing richness

For garnish

  • strawberry crunch topping
  • fresh strawberries For decoration
  • whipped cream For serving

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Crush the red velvet Oreos into fine crumbs, mix with melted butter and press into the bottom of a springform pan to form the crust.
  • In a large bowl, beat together the cream cheese and sugar until smooth. Add the eggs, sour cream, and vanilla extract, mixing until well combined.
  • Pour the filling over the prepared crust. If using, add dollops of red velvet cake batter and swirl for a marbled effect.

Baking

  • Bake in the preheated oven for approximately 45-50 minutes until the center is set but may still jiggle slightly.

Cooling and Chilling

  • Allow the cheesecake to cool completely at room temperature, then cover and refrigerate for at least 4 hours or overnight.

Serving

  • Before serving, sprinkle the top with strawberry crunch topping and garnish with fresh strawberries and whipped cream.

Notes

For a lighter version, consider using low-fat cream cheese and sugar substitutes. Avoid overmixing to prevent cracks, and refrigerate overnight for best flavor and texture.
