For the meatballs

  • 2 pounds frozen meatballs Ready-to-cook.
  • 1 can (20 oz) pineapple chunks, drained Adds texture.
  • fresh parsley to taste for garnish Optional for presentation.

Preparation

  • In a medium-sized mixing bowl, whisk together the barbecue sauce, pineapple juice, brown sugar, soy sauce, garlic powder, onion powder, black pepper, and red pepper flakes (if using) until smooth.
  • Add the frozen meatballs to a slow cooker and pour the prepared sauce over the meatballs, ensuring they are fully coated.
  • Gently fold in the drained pineapple chunks.

Cooking

  • Cover the slow cooker and cook on low for 4 to 5 hours or on high for 2 to 3 hours, stirring occasionally.
  • Once fully heated and the sauce has thickened slightly, garnish with fresh parsley if desired.

Serving

  • Serve warm as an appetizer or over steamed rice for a complete meal.

Notes

Avoid using fresh meatballs as they can cook differently. Ensure to stir occasionally while cooking for even coating and flavor distribution. Leftovers can be stored in an airtight container for up to three days.
