Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Slice the sweet potato into 1/4-inch thick slices. Arrange the slices on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  • Roast in the oven for about 20-25 minutes, flipping halfway through, until tender and slightly crispy.

Making the Beet Hummus

  • In a food processor, combine the cooked beets, chickpeas, tahini, olive oil, lemon juice, garlic, salt, and pepper.
  • Blend until smooth, adding water a tablespoon at a time until you reach your desired consistency.

Assembly

  • Once the sweet potato slices are done roasting, let them cool slightly. Spread a generous layer of beet hummus on each sweet potato slice.
  • Top with a piece of burrata cheese and sprinkle with pomegranate seeds.
  • Drizzle with balsamic glaze if desired and garnish with fresh herbs.
  • Serve immediately.

Notes

Cook your beets ahead of time if using fresh beets for better flavor. Customize the hummus with your favorite herbs and spices. Can be served as a snack, appetizer, or main dish.
