  • 1/4 cup grated Parmesan cheese Adds a sharp, nutty flair.
  • 1 tbsp olive oil For searing the salmon.
  • 2 cloves garlic, minced Creates the aromatic foundation.
  • 1 cup baby spinach, chopped Adds freshness and color.
  • 1/4 cup sun-dried tomatoes, chopped Contributes a tangy touch.
  • 1/2 tsp Italian seasoning Ties all the flavors together.

Garnish

Instructions
 

Cooking the Pasta

  • Cook the penne pasta according to the package directions. Reserve 1/2 cup of the pasta water, then drain and set aside.

Searing the Salmon

  • Heat olive oil in a large skillet over medium heat. Season the salmon chunks with salt, pepper, and paprika.
  • Sear the salmon for 2–3 minutes on each side until golden, then remove from the skillet and set aside.

Making the Sauce

  • In the same skillet, sauté the minced garlic until fragrant, about 1 minute.
  • Add the chicken broth and heavy cream, stirring to combine, and bring to a simmer.
  • Stir in the Parmesan cheese until melted and smooth.
  • Mix in the Italian seasoning, sun-dried tomatoes, and chopped baby spinach. Cook for 2–3 minutes until the spinach wilts.

Combining Everything

  • Toss the cooked penne into the sauce, ensuring it’s evenly coated. Adjust the consistency with reserved pasta water as needed.
  • Gently place the seared salmon chunks back into the skillet and warm through for about 2 minutes.

Serving

  • Garnish with fresh basil leaves and serve immediately.

Notes

For best flavor, use freshly grated Parmesan cheese. A squeeze of lemon juice just before serving can brighten the dish.
