Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  • In a small bowl, mix the graham cracker crumbs with melted butter until well combined. Press about a tablespoon of the mixture into the bottom of each cupcake liner to form the crust. Set aside.
  • In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
  • Add vanilla bean paste, eggs, sour cream, and heavy cream. Beat until the mixture is silky and smooth.
  • Pour the filling over the crusts in each cupcake liner, filling them nearly to the top.

Baking

  • Bake for 18-20 minutes, or until the centers are set and slightly jiggly.
  • Remove from the oven and let them cool completely.
  • Once cooled, refrigerate for at least 2 hours or overnight to allow them to firm up.

Finishing Touches

  • Just before serving, sprinkle a thin layer of granulated sugar on top of each cupcake.
  • Use a kitchen torch to melt and caramelize the sugar until it’s golden and crackly.

Ensure your cream cheese is softened completely to avoid lumps. Experiment with different flavored extracts or citrus zest for an exciting twist. If you don’t have a kitchen torch, you can place the cupcakes under the broiler for a few minutes, keeping a close eye on them to prevent burning.
