Ingredients
  

For the Whipped Ricotta

  • 100 g cream cheese Creamy and rich, adding depth to the mixture.
  • 150 g ricotta Light and airy, contributing a fresh taste.
  • 1 tsp vanilla bean paste or extract Adds warmth to the dish.

For the Croissants

  • 1 piece croissant Sliced in half; flaky and golden.
  • 50 g butter For toasting the croissants.
  • 1/2 cup honey Heated to create burnt honey.
  • a couple lavender flowers For garnish.
  • a couple sprigs of thyme leaves For garnish.

Preparation

  • In a mixing bowl, combine the cream cheese, ricotta, and vanilla bean paste. Whip until smooth and creamy. Set aside.
  • In a small saucepan, heat the honey over medium heat until it darkens and develops a caramelized flavor, about 5-7 minutes. Let cool slightly.

Toasting Croissants

  • Melt butter in a skillet over medium heat. Add the sliced croissant halves, cut side down, and toast until golden brown and crispy, about 2-3 minutes. Remove from skillet.

Assembling

  • Spread the whipped ricotta mixture on each toasted croissant half. Drizzle burnt honey over the ricotta.
  • Garnish with lavender flowers and thyme leaves.

Serving

  • Serve warm as a delicious breakfast or brunch treat.

Notes

Consider folding in some finely chopped nuts or fruits into the whipped ricotta for texture. Lemon or orange zest can add a hint of brightness.
