For the filling

  • 12 oz cream cheese, softened for a creamy filling.
  • 1/3 cup granulated sugar to balance the tanginess of the cream cheese.
  • 1/2 teaspoon vanilla extract bringing warmth and aroma.
  • 2 large eggs, at room temperature ensuring the batter blends smoothly.
  • 1/4 cup sour cream or Greek yogurt for a hint of tang.
  • 1/2 cup white chocolate chips, melted and slightly cooled offering indulgent sweetness.
  • 1/2 cup fresh or frozen blueberries bursting with flavor.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs resemble wet sand.
  • Press the mixture firmly into the bottom of each cupcake liner to form a crust.
  • In another mixing bowl, beat the softened cream cheese and sugar until smooth.
  • Gradually add in the vanilla extract and eggs, mixing well after each addition.
  • Stir in the sour cream and melted white chocolate until everything is well blended.
  • Gently fold in the blueberries, ensuring they are evenly distributed.
  • Pour the cheesecake filling over each prepared crust, filling each about three-quarters full.

Baking

  • Bake for 18-20 minutes, or until set and lightly golden.
  • Remove from the oven and let cool for a bit, then refrigerate for at least 2 hours before serving.

Serving

  • Serve topped with whipped cream, extra blueberries, and white chocolate shavings or drizzle, if desired.
