Preparation

  • In a large mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
  • Gently fold in the graham cracker crumbs and mashed raspberries until well combined.
  • Chill the mixture in the fridge for about 30 minutes.

Shaping

  • After chilling, scoop about a tablespoon of the mixture and roll it into a ball. Place the balls on a parchment-lined tray.
  • Continue until all the mixture is shaped into balls and chill for at least an hour.

Coating

  • Melt 1 cup of white chocolate chips in a microwave-safe bowl in 20-30 second intervals, stirring in between.
  • Dip each chilled cheesecake ball into the melted white chocolate until fully coated.
  • Return the coated balls to the tray and sprinkle with crushed freeze-dried raspberries.

Chill and Serve

  • Chill the coated cheesecake balls for at least 30 minutes or until the coating has hardened.
