For the Avocado Lime Crema

  • 1/2 cup thick Greek yogurt Adds tanginess.
  • 1/8 cup fresh coriander Reinforces the herby freshness.
  • 2 Tbsp lime juice Lifts the flavors and adds brightness.
  • 6-8 pieces jarred jalapeƱos Adds a spicy kick.
  • 2 cloves garlic Adds an aromatic punch.

Instructions
 

Preparation

  • Grate the zucchinis and place them in a clean tea towel. Let them sit for about 15 minutes to allow excess moisture to escape. Squeeze out all the liquid, ensuring the zucchinis are dry.
  • In a mixing bowl, combine the corn, diced red onion, beaten eggs, grated Parmesan, and chopped coriander. Add the grated zucchini and stir in the flour and baking powder. Season generously with salt and pepper.

Cooking

  • Heat olive oil in a frying pan over medium heat. Scoop portions of the fritter mixture into the pan and flatten them slightly. Cook each fritter for about 5 minutes on each side or until golden and crispy.

Preparing the Crema

  • In a food processor, blend the ripe avocados, Greek yogurt, fresh coriander, lime juice, jalapeƱos, and garlic until smooth. Transfer to a piping bag for easy serving if desired.

Serving

  • Serve the warm fritters alongside a dollop of avocado lime crema.

Notes

For added flavor, consider spices such as cumin or smoked paprika. For a vegan version, substitute eggs with a flaxseed mixture (1 tbsp flaxseed + 2.5 tbsp water). Experiment with different herbs or cheese like feta or cheddar.
